Our Sustainability and Positive Impact Statement

Our Commitment to Sustainability

At Our Italian Table, sustainability is about creating meaningful experiences that respect our environment, support our local community and celebrate the traditions of authentic Italian cooking.  We believe responsible tourism is achieved through thoughtful daily decisions that minimise environmental impact while creating lasting social and economic benefits for the Hunter Valley.

Our approach is built around continuous improvement, ensuring our business operates responsibly while delivering exceptional guest experiences.

Our Positive Impact Statement.

Environmental Sustainability

– Renewable Energy

Our Italian Table has invested in solar energy to reduce our reliance on grid electricity. By generating clean renewable energy on-site, we have significantly reduced our carbon footprint and continue to lower greenhouse gas emissions associated with our daily operations.

– Waste Reduction

Reducing waste is an everyday priority.

Initiatives include:

  • Careful menu planning to minimise food waste
  • Portion control to reduce excess ingredients
  • Composting suitable food scraps
  • Recycling glass, cardboard, plastics and paper
  • Reusing packaging wherever possible
  • Purchasing ingredients in bulk to minimise packaging waste
  • Encouraging reusable containers and sustainable packaging

Our goal is to continually divert waste from landfill while making the best possible use of every ingredient.

– Local and Seasonal Produce

Wherever possible we source ingredients from local producers throughout the Hunter Valley and surrounding regions.

Benefits include:

  • Supporting local farmers and small businesses
  • Reducing transport emissions
  • Showcasing seasonal produce
  • Providing fresher ingredients for guests
  • Strengthening the regional economy

Many classes highlight the importance of seasonality and traditional Italian cooking using fresh, locally available produce.

– Water Conservation

Water is managed carefully throughout the property through initiatives including:

  • Efficient kitchen cleaning procedures
  • Responsible dishwashing practices
  • Water-wise garden management
  • Mulching gardens to retain moisture
  • Selecting plants suited to local climate conditions

These measures help conserve water while maintaining beautiful outdoor dining spaces.

– Sustainable Gardens

The gardens surrounding Our Italian Table are designed to complement the natural landscape while supporting biodiversity.

Our gardens feature:

  • Herbs used within cooking classes
  • Seasonal edible plantings
  • Water-efficient landscaping
  • Habitat for birds, bees, chickens and beneficial insects
  • Minimal chemical use wherever practical

The gardens become part of the educational experience, connecting guests with the origins of the ingredients they use.

Responsible Tourism

Our Italian Table encourages visitors to slow down, connect with the local region and appreciate authentic experiences rather than high-volume tourism.

We focus on:

  • Small group experiences
  • Extended stays within the Hunter Valley
  • Supporting neighbouring wineries and local businesses
  • Encouraging visitors to explore regional attractions
  • Sharing local stories and Italian culinary traditions

This creates meaningful tourism experiences that provide ongoing benefits to the local visitor economy.

Education & Cultural Preservation

Our classes preserve authentic Italian food traditions by teaching techniques that have been passed through generations.

Guests learn:

  • Traditional pasta making
  • Regional Italian recipes
  • Seasonal cooking
  • Reducing food waste in the home
  • Making meals from scratch
  • Respecting ingredients through simple cooking

By sharing these skills, guests often continue sustainable cooking practices long after their visit.

Community Impact

Supporting our community is central to everything we do.

Our initiatives include:

  • Working with local suppliers
  • Supporting regional tourism
  • Collaborating with neighbouring businesses
  • Creating employment opportunities
  • Purchasing locally whenever practical
  • Participating in community initiatives and fundraising opportunities

These partnerships strengthen the Hunter Valley visitor economy while supporting small regional businesses.

Inclusive Experiences

Our Italian Table is committed to making guests feel genuinely welcome.

Recent initiatives include:

  • Individual support where practical
  • Careful consideration of dietary requirements
  • Flexible communication with guests before arrival
