2026 Regional Series

Travel through Italy one region at a time in this hands-on Italian Regional Cooking Class.  Discover the stories, ingredients, and techniques that define each region, from rustic countryside dishes to refined coastal flavours.  In this class you’ll cook a complete regional menu using traditional methods and seasonal produce, then sit down to enjoy the dishes you’ve created together.  A delicious way to experience the true diversity of Italian cuisine.  Curated by Richard Latham, a renowned chef in the Hunter and his wife Leisa, they will take you on an unforgettable journey of taste,  sensation and pure joy inspired by traditional Italian cooking.

Series 1 - Tuscan Summer 

Immerse yourself in the flavours of a Tuscan Summer.  In this hands-on class, we celebrate the season’s vibrant produce and rustic charm , think sun-ripened tomatoes, fragrant herbs, handmade pasta and simple dishes that let the ingredients shine.  Learn the secrets of regional Tuscan cooking as we prepare a menu inspired by long lunches under the olive trees and warm afternoons shared with friends.

Slow down, cook with heart, and taste the essence of Tuscany right here in the Hunter Valley.  This series of regional inspired classes will be run by our very talented and chef to many of our fine restaurants here in the Hunter - Richard Latham.

We are a BYO venue and the class begins at 10am, welcome to arrive at 9.45am to settle in and concludes at the venue around 3.30pm. Gather your group and and select your date below.

* Class suitable for children aged 14 years or older , if under 18 they must must be accompanied by an adult.

* The cost of the class starts from $325 per person.

* We are a BYO venue.

* Recipes and ingredients may vary from class to class, so that we can always source the freshest seasonal ingredients available on the day.

* Class and the lunch runs for 5+ hours starting at 10am and concludes around 3.30pm at the venue, unless otherwise stated on the booking page.

Dietary Requirements -  This class involves traditional pasta and bread making and is not suitable for gluten-free, vegan or dairy free diets. While we endeavour to accommodate dietary requirements where possible, ingredient substitutions cannot always be made.

As an Italian cooking school, our menus regularly include ingredients such as tomatoes, basil, onion, garlic, nuts, eggs and dairy.  Classes are held in a shared setting and some dishes cannot be modified.

Mobility and Pram Access - Yes we have mobility and pram access on our venue.  We request that prior to booking a spot in a class you contact us either by email or directly on 0412 229 521 so that we can ensure the class you book into is best suited to your needs.
